Which software to use?

I am planning to buy a digital videocamera perhaps this one I dont know yet:

Sony DCR-SR70 with a built-in hd with cap.of 60GB
But my question is what software should or could I use for mastering my own videos before putting them on discs?

I havent used anything like this before but want perhaps the best result there is on my recordings.If it´s possible,my own explaining text in the beginning of the film and so on ,I´m sure someone understands what I´m looking for?

Freeware,payware??
