Have you used the program IFOedit before? It's a little complicated to learn at first, but for stripping out languages and subtitles that you don't want, it's rock-solid. Plus, you can test your results before burning (or processing with DVD2ONE), and make sure that the things you took out aren't going to ruin your DVD.
One of the problems with a one-click program giving you the option to remove certain things is that (for full disk copies), many parts of a program chain that you wish to keep may reside in chains the program tries to remove. Or you wind up with buttons that don't work in your menus. OR you have the order of certain features changed, with certain buttons giving you different results than they used to before.
In essence, since DVDs are authored in many diverse ways, it makes it close to impossible (note the use of the word "close") to make a one-size-fits-all program.
So, my advice would be to visit Doom9.org and download IFOedit... read the posted guides... and good luck!
