Choppy video could be blamed on a slow internet connection, among other things. How do they appear to you? To view quicktime movies in your browser only requires a plugin, not the whole package. I'm surprised your friends don't have the plugin installed already or maybe it's just not enabled. If you want to invest a few dollars for Quicktime Pro go ahead. Is it difficult to use? Never had a reason to try it myself, so I can't really say. Will it improve the quality of your friends viewing? Not if the problem is a slow connection and if you're still creating .mov files they will still need the plugin .Plus if you make a higher quality video it will require more bandwith to upload and download.
