What I recommended most is Pavtube ByteCopy - the pro version of Blu-ray Ripper. When I said the "Pro version" it means you can free choose wanted audio tracks and subtitles when backing up to Multi-track MKV/MP4/MOV format and Multi-track ProRes codec (only available in Mac version). Moreover, both Windows and Mac versions support exporting a lossless MKV file without any compression. Also the windows version allows you extracting a *.srt subtitles from Blu-ray movie.
Besides, if you want to get an intact M2TS/VOB file of your BD/DVD movie, you can check the "Directly Copy" preset in format list.
We also have a "Full Disc Copy" icon on the top of all our BD/DVD ripping tools. It will backup your disc 1:1 exactly the same as your source disc, like info files, STREAM folder with every small video clips (*.vob for DVD, *.m2ts for BD). If you don't want to get a compressed copy, "losselss MKV", "Directly Copy" and "Full Disc Copy" are mostly recommended.
