Remastering is where you make a CD from files you want, while 1:1 copying is where you make an exact copy.
I don't think it's possible to copy a protected CD using Remastering software, but usually you crack it with something like UnSafedisc, then burn the cracked file. In my opinion it is better than 1:1 copy because it is digital and all of your copies are almost guaranteed to work.
1:1 copying programs such as CloneCD can give you problems because it copies all sorts of errors, while remastering always works because it uses Error Checking and Correction (ECC).
