Does the Mac OS X version have a modem? If it does not, what type do I get so that I can use dial-up internet access?

Mac OSX is an operating system, which is software.
A modem is a piece of hardware.

Obviously, Mac OSX does not have a modem built in.

That driver comes with the modem when you buy it.

What kind of dial-up? The plain old analogue telephone system or some mobile solution?

Well, there is such a thing as a “soft modem” which uses the cpu/ram of the pc (you’ll still need the appropriate driver), one of my boxes has one. You should just look at the back of your Mac to see if there is a connection for a phone line, it there is one, chances are you already have a modem.
