If I don't need DL, which fw should I use?

Currently with 1.07 bitsetting beta 4

Should I use the DL beta 5, even ehough I won’t be using DL media?

AFAIK, Herrie didn’t implement any significant media changes in B5.
I’m using 1.07v2B4, been very happy with it.

If you don’t use the listed media (or don’t need the speedups for it), you should be fine with beta4.
