Yes ,it's possible to rip only the audio of a dvd.
I think that the most easy method is by using DVD2SVCD. It makes various extractions of a dvd , including an audio track.
You can do whatever you want with it It will be one big track though and it's in an mpeg2 format.
You can use Winamp to covert it to a .wav file and almost every writing program can burn .wav files to music cd's.
While you get more and more experience in ripping dvd's , you can examine the bundled tools that came with dvd2svcd to find out what particular tool ripped the audio track(s) and expand your knowledge that way.
