After using dvdshrink 3.16 to encode the desired compressed files, which dvd recording format on nero 6 should I use?
I’ve seen dvd-video and dvd-udf/iso mentioned on different guides.
Just click the burn w/ Nero box in Shrink ( under preferences) and it will automatically burn the DVD for you.
I’ve been using the ‘one click’ route you suggest. Does this just use my existing nero 6 settings or does dvdshrink use its own default settings (the right ones?) ?

Shrink should automatically set everything up. Use a RW and practice. It works fine for me
