IMHO, the last one is the best of the three. It attempts to port the actual Windows 7 Explorer.exe into Windows 8, thus eliminating Metro, and giving you your old Start Menu back, with all the same options that you had with 7. This process is minimally invasive enough that you can easily reverse it. You’ll need a copy of Windows 7’s Explorer.exe, though.
Please note that, in my experience, Vista Start Menu doesn’t show up in the usual Start Menu area. It does, however, have a tray icon that you could click to open it.
Good luck trying to get any of these programs to work after Blue, which I’m sure is exactly how you will feel after you install it.
Knowing Microsoft, all of these programs will be blocked, and the devs will need to find new hacks.
