Full Disk vs. Movie Only

If I use Movie Only instead of Full Disk, will this make my DVD quality better as far as audio and visual quality goes.

of course. using "movie only" leaves more room on the disc for the movie itself. however, this is only important if the original disc is a dvd9.

If I use the Movie only, is this going to exclude menus and screen selectors? What does it exclude in the Movie only exactly?

"movie only" is exactly what it sounds like, which is the movie only; no menus, extras, etc. there are some programs that allow u to select what u'd like to leave off the dvd. try checking out the transcoding forum for more info on dvd backup programs.
